These muffin will be a hit any time of the day. I cut mine in half a put them in snack size baggies, popped them in the freezer and they will make the perfect on the go snack. Going shopping? Grab a muffin and take it with, no worries about starving half way through shopping and grabbing what ever the store is selling like chips or a chocolate bar and blowing you healthy eating right out the window. When I made mine I used an 8 cup muffin tin rather than 12, I like bigger muffins. total weight is about 60 grams each
1 1/2 cups whole wheat flour
1 cup splenda or sugar if you aren’t fussy on sweeteners, you could use Stevia as well
3 tsp baking powder
1 1/2 teaspoons ground ginger
1 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
2 large eggs, lightly beaten
1 cup sweet potato, cold mashed
mix all the ingredients together, fill a greased muffin tin and bake at 400 degrees for 15 to 20 minutes or until tooth pick comes out clean.
