2 chicken breasts, quartered, raw
4 or 5 red potatoes
12 or so baby carrots sliced length wise
1 small onion, sliced
4 garlic segments, chopped
2 oz golden Italian dressing, mixed with
2 oz basil Parmesan dressing
1/4 cup grated Parmesan cheese – set aside
Preheat oven to 400 degrees
Add all ingredients except Parmesan cheese into oven safe dish, mix well and bake with lid on for about 30 minutes, stir, sprinkle Parmesan cheese over vegetables and chicken and bake for about 40 more minutes or until veggies are tender.
Serve with a side salad, serves 2 – 4 people, serving size approx. 450 grams
